The Fancy Omelette

Don’t let this rambunctious omelette fool you.

It’s a lazy lady, 5 minute, 1 pan wonder kinda meal.

I know right, it’s what dreams are made of!

This recipe is full of good fats, protein and micronutrients.

Ideal for a hearty post training meal, or for those looking for low carb meals that ain’t rabbit food :-)

INGREDIENTS

2-3x eggs

1 chilli finely chopped

1 spring onion finely chopped

1 tsp cream

¼ cup chopped herbs (e.g. Parsley, chives, dill)

½ cup finely chopped red cabbage

½ cup roughly chopped broccoli

½ cup sliced mushrooms

3 baby bocconcini balls (halved)

1 tsp organic butter

METHOD

Whisk eggs, chilli, spring onion, cream & herbs in a bowl

Heat butter in a small non-stick pan, medium heat

Add cabbage, mushrooms & broccolini to pan and toss for 2-3mins

Pour egg mixture over the top until all veg is covered

Allow to cook for 2mins then place bocconcini halves on top

Place a lid on top and cook on a low heat for another 3mins or until cooked through.

*don’t over heat it, you’ll be a sad gal if you burn its arse.

Vegan option

Use silken tofu instead of eggs… might just look a little more like post sex…A hot mess.
