Rich in B Vitamins, collagen, glucosamine & conjugated linoleic acid (CLA); bone marrow is thought to have powerful anti-inflammatory effects, and collagen building properties. Great for supporting joint health and longevity and preventing premature skin damage. It might not turn back the clock, but these longevity effects will certainly slow the ageing process.
Where to get bones?
Visit your local organic butcher and let them know the purpose for the bones, they can cut the bones for you making it easier to cook, Beef bones work well due to the size, but other large animal bones are fine also.
You don’t need to be fussy on the type of bones, knuckle, femur, shank and neck work fine. I usually just ask what they have.
How to prepare bone marrow?
Pre-heat your oven to 220-240 degree, and roast on a baking tray for 12-15mins.
How to eat bone marrow?
Scoop it straight out of the bones and enjoy it straight off the spoon, or use it like butter on crispy toast, vegetables or in soups for flavour.
Hot tip* Allow it to cool a bit first or you’ll burn the shit out of your mouth.
Marrow on seared broccolini & Chimichurri
Ingredients
1 kg beef bones (halved, then split length ways)
2 bunches broccolini - quickly seared on a hot fry pan
Chimichurri
1/2 cup olive oil
2 tbs red wine vinegar
1/2 cup finely chopped parsley
3-4 cloves garlic , finely chopped or minced
2 small red chilies , or 1 red chilli, deseeded and finely chopped (about 1 tablespoon finely chopped chilli)
3/4 teaspoon dried oregano
1 tsp coarse salt & pepper
*Option to use half parsley half coriander
*Combine all ingredients in a bowl and allow to sit to at least 5 minutes before serving.
* Store in fridge.
Final note; It’s f*cking delicious
