Green Goddess Pasta
It’s green and it’s real good.
Don’t shy away from green foods friends, they hold super nutritional powers that should not be overlooked. Green foods care for our hormones, liver, gastrointestinal health and heart.
This recipe takes 10 mins. YUP, 10MINS!!. It’s also really versatile. You can swap ingredients for what you have available in the fridge or specific flavour preference.
Don’t like basil? Use coriander. Don’t have broccoli? Use zucchini or green beans. Olives aren’t yo’ thang? leave em out, or add sun-dried tomatoes.
Good quality pesto shouldn’t be overlooked. Fresh herbs and a extra virgin olive oil is where many of the super powers lie.
Ingredients
Basil Pesto
1 bunch basil
1/2 bunch flat leaf parsley
1/4 nut of choice (pine nut, hazel nuts, or cashews all work well)
1/4 - 1/3 cup olive oil
1/4 cup parmesan cheese (or nutritional yeast. It’s a healthy, cheesy flavoured alternative)
Juice of 1x lemon
S+P to taste
Method
1. Blend in NutriBullet. Modify according to taste
2. Use half, and save the rest for another meal.
Pasta
1 Packet Edamame or Black bean fettuccini https://slendier.com/bean-pastas/
3 Organic broccoli or broccolini heads, roughly chopped including stalks. Just cut off the end nubs.
1.5 cup green peas (simply pour boiling water over them & immediately drain)
1/2 kalamata olives, pitted & halved *optional
1/4 cup pepita (pumpkin) seeds
1 packet organic fresh baby rocket
Method
1. Place chopped broccoli pieces in a large colander, and rinse. Leave in sink.
2. Boil water in a large saucepan with a pinch of salt. Add entire pasta pack, and cook for 4-5mins. Don’t over cook it, or it will go soggy.
3. To drain pasta; pour contents over the broccoli & peas, and into the colander (the heat of the water will lightly cook the greens). Drain off all excess water, then transfer pasta and greens into a very large salad dish.
4. Add 1/2 of pesto, olives & pepitas to pasta and combine until evenly covered.
5. Serve with a large handful of fresh rocket + extra parmesan or nutritional yeast
