Greens & Soba Noodle Salad

This soba noodle salad is such a fabulous meal for nights when you want a quick and easy vegetarian dinner, that’s delicious and balanced.

To make the meal go further, I recommend adding asian marinated chicken or tofu.

Soba noodles are traditionally made from 100% buckwheat flour, making them gluten free. Be sure to check the back of the packet when purchasing soba noodles, because many brands will use a combination of wheat and buckwheat flour.

Buckwheat is a lovely gluten free carbohydrate source providing B vitamins, folate, and dietary fibre.

This salad is currently a family favourite at home, and provides enough for additional lunches, especially when accompanied with my asian marinated chicken.

Ingredients

  • 1 packet soba noodles

  • 1 head broccoli

  • 1 cup sugar snap peas

  • 1 cup frozen green peas or shelled edamame beans

  • 6 springs onions

  • 1/2 bunch coriander

  • 1 red chilli *optional

Ginger soy dressing

  • 2 tbsp tamari or soy sauce

  • 2cm knob ginger finely grated or chopped

  • Juice of 1 lime

  • 1 tbsp rice wine vinegar 

  • 1 tsp sesame oil

  • 1/2 tsp honey

Method

  1. Place all dressing ingredients into a jar and shake until combined, taste and adjust to your liking.

  2. Cook soba noodles in a large deep pot of boiling water for 2.5 mins (no longer). Rinse under cold water then transfer into a large salad bowl filled with cold water. This helps the noodles stay fresh while you prepare the other ingredients.

  3. Wash and chop broccoli into bite sized pieces and transfer into a large bowl with the peas. Pour a full kettle of boiling water over the broccoli and peas and leave for 2 mins.

  4. Wash and roughly chop sugar snaps peas, spring onions, coriander, and chilli *if using.

  5. Drain and rinse noodles, then transfer back into the large salad bowl. Drain and rinse the greens and add to the noodles, along with the spring onions, coriander and chilli. Finally pour in the dressing and toss until well combined.

Serves 4 *up to 6 serves if paired with additional protein like chicken of tofu
