Fluffy Mushroom & Feta Quiche

Ingredients
8 eggs
225g cottage cheese
150g goats cheese or feta
1/4 cup gluten free self-raising flour
300g mushrooms thickly sliced
1 cup peas
1 onion thinly sliced
1 tsp dried thyme
1 tbsp Butter
1/4 cup grated parmesan
Method
Pre-heat oven to 170 degrees. Grease or line a spring cake tin, or casserole dish.
Melt butter in a frying pan on medium heat, add onions and stir occasionally until browned.
Add mushrooms, thyme, salt & pepper. Stir occasionally until brown, and all the liquid has reduced. About 15mins in total.
In a large mixing bowl, whisk the eggs, then add flour and cottage cheese and whisk until combined.
Finally add feta, peas, and the mushroom mix. And stir until the vegetables are evenly dispersed, then transfer into the baking dish, and sprinkle over grated parmesan.
Bake in the oven for 40-50mins; To check if it’s ready, place a knife into the center then remove it. It should come out clean. Bake for longer if needed.
