Banana and Oat Bars
Banana & Oat Bars ~ 12-16 bars
The perfect mid-morning snack or breakfast at the office
Ingredients
4 medium-large bananas
2 cups of rolled oats or activated organic buckwheat buckins (or both)
3 tbs. pumpkin seeds
2 heaped tbs. of raw cacao *optional
2 tbs. cinnamon
1 tbs. of black sesame seeds
¼ cup of crushed walnuts
¼ cup of almonds
¼ cup of brazil nuts
¼ cup of goji berries
1 cup of coconut flakes
Method
Preheat oven to 170 degrees
In a large mixing bowl add bananas, using a fork mash bananas until pureed.
Add oats, cinnamon, coconut, mixed nuts and seeds, goji berries and cacao and mix until well combined.
Line baking tray with baking paper, with your hands or spoon to shape mixture into bar sizes and to baking tray. Bake for 15-20 minutes until crispy brown and enjoy!
Serving suggestions
Breakfast: 1-2 bars crushed on top of ½ cup yogurt
Snack: 1 bar with 1 tsp of nut butter
