Cacao & Coconut Protein Balls

Low in sugar, high in good stuff

The perfect afternoon pick me up or afternoon dinner treat. They’re high in protein, omega 3 fatty acids and very low in sugar. Ideal for sustained energy and cognitive function throughout the day.

This recipe makes 18-22 bite sized balls.

If you can’t be fagged rolling them into balls, you can always press them into a flat container slice them up once cold.

Chia seeds - a great plant source of protein and omega 3 fatty acids. Terrific for plant based diets.


Substitutes

  • Any nut or seed butter will work. I always looked for all natural ingredients with no sugar.

  • Pepita & chia could be subbed for other seeds or grains. Such as; oats, buckwheat, sunflower seeds or flaxseeds.

  • Maple syrup could be subbed for honey or other natural sweetener


Ingredients

  • 1/4 cup cacao

  • 1/4 cup desiccated coconut

  • 1/4 cup pepita seeds

  • 1/4 cup chia seeds

  • 1/4 cup pure cashew butter or other nut/seed butter

  • 2 tbsp pure maple syrup

  • 1 tbsp melted coconut oil or organic butter

  • 1 tbsp protein powder *optional

  • + dash of water if needed


Method

  • Combine all dry ingredients in a medium sized mixing bowl.

  • Combine all wet ingredients, then add to the dry mixture using a firm spatula.

  • You may need to use your hands to combine ingredients into a dough, add a splash of water if needed.

  • Roll into small balls onto a plate, then pop into the fridge for at least 30mins.

  • Store in an airtight container in fridge.
