Carrot Cake Overnight Oats
Dessert for breakfast? Yes please!
This breakfast will get you in the festive spirit all year round, and best yet it is also nutrient dense, packed with dietary fibre, protein and good fats to ensure you are nice and satisfied for the rest of the day.
Ingredients:
½ cup of rolled oat
½ carrot, peeled and grated
¼ tsp. of nutmeg (or all spice)
½ tsp. of ground cinnamon
100 ml of milk of your choice
1 tbsp. of shredded coconut (optional)
1 scoop (30 grams) of vanilla protein powder (otherwise you can use 1 tsp. of vanilla extract).
Small handful of walnuts
Small handful of mulberries (or sultanas)
Preparation:
Mix all ingredients into a serving bowl or a sealed container and place it in the fridge to set overnight. Add more milk or nuts if desired.
