D.I.Y Sushi
This month at Holistic Sister, we’re talking a lot about community, and how participating in exercise can influence a sense of community, by bringing like-minded people together, to share an experience/s.
Community is vital for humans to thrive, and has been the foundation to our existence in the world. However, as the world is forever evolving, and we have to adapt our lifestyles to our new surrounding & resources available to us.
Where we find community in the 21st century may look vastly different to the early 18 + 1900’s but the essence is still the same. It evokes a sense of togetherness and belonging. And helps individuals feels safe, supported and heard.
I originally made this recipe to make bulk lunches (which you can) for my partner and I. However I recently did it again with friends, where I placed all the ingredients on a table, and we individually made our own sushi or rice paper rolls for dinner while sipping of homemade Aperol spritz. I also added some marinated firm tofu strips for extra protein.
It was such a lovely, slow paced way of enjoying a meal, while chatting and enjoying the warm summer night.
The best thing about this meal, is the versatility. You can use pretty much any vegetable, protein, or grain of choice. You could even use cauliflower rice.
Ingredients
1 pack nori sheets +/or small rice paper sheets
1.5 cups dry quinoa - cook using absorption method & cooled.
1-2 tbsp Sushi rice vinegar
2 carrots peels, cut in half and finely julienned
1 red capsicum julienned
1 yellow capsicum julienned
2 Lebanese cucumbers seed flesh removed, cut in half and julienned
Baby spinach leaves
2 avocado halved and sliced
To serve, enjoy with tamari, pickled ginger and wasabi
