Naked Spanakopita

This spanakopita has a healthy twist on the traditional recipe, packed with spinach, silverbeet, pumpkin seeds and nuts it provides an abundance of nutrients including vitamin A, C, iron, calcium, B6, zinc and good fats. Recipe below!
One of my favourite things about this recipe is that you don’t have to follow it by the book, If you’re a little short or over on any ingredient it still works. Over time, you’ll just start throwing things in a bowl, and perfecting your own version over time.
If you’re looking for extra protein, enjoy with a side of eggs or bacon. Or with a big handful of fresh leafy greens and a good lug of olive oil.
Ingredients
1 large bunch of silverbeet
1/2 cup almond meal (for lining a baking tray)
3 tbsp. of pumpkin seeds
3 tbsp. of LSA mix or whole flaxseeds
8 eggs
1 tsp. of nutmeg
2 tbsp. of unhulled sesame seeds
1/2 tsp. of freshly ground pepper
100 grams of Greek Feta *optional
500 grams of ricotta (full fat)
6 spring onions, chopped
3 dill sprigs, chopped
Preparation:
1. Preheat the oven to 180°C.
2️. Wash the silverbeet and pat dry, then pull the leaves from the stems; coarsely shredding then.
3️. Place the feta in a large bowl and break into small pieces using your fingers. Add the ricotta, eggs, LSA mix, pumpkin seeds, nutmeg, pepper, 6 tbsp. of almond meal, dill and spring onions. Mix with a wooden spoon to combine. Place the spinach and silverbeet on top and mix lightly with your hands.
4️. Line baking tray with baking paper followed by using a spoon to evenly line the baking tray with almond meal until the surface is completely covered .
5️. Use your hand or a large spoon to gently mix the spinach/silverbeet filling until thoroughly combined. Tip into the baking tray and spread out evenly.
6️. Garnish with sesame seeds and bake in the oven for 60 minutes or until well browned. Cover with baking paper if it is over-browning. Cool on a rack for 15 minutes before serving.
