High protein oat & choc chip cookies

“I don’t like cookies”

This is a great recipe to whip up when you’re craving a healthy sweet snack.

And works a treat for school lunch boxes, or accompanied by a cup of tea.

Ingredients

  • 1 cup rolled oats (blended into a flour)

  • 1 cup rolled oats or muesli (I used left over muesli that was packed full of oats, seeds, nuts)

  • 2 scoops vanilla protein powder

  • 1/2 cup chocolate chips (I like to use dark chocolate or a sugar free alternative)

  • 1 tsp baking powder

  • cinnamon

  • pinch of salt

  • 2 eggs

  • Natural vanilla essence

  • 1 tbsp butter (or Ghee, coconut oil)

  • 2-4 tbsp maple syrup (honey, rice malt syrup, or monk fruit are also good alternatives.


Method (makes 16-20)

  1. Pre-heat the oven to 180, and prepare a lined baking tray

  2. In a large mixing bowl, combine blended oats, whole oats (or muesli), protein powder, baking powder, cinnamon & salt.

  3. In a small bowl, melt butter or oil (don’t burn it), then add sweetener or choice ( I used 2 tbsp maple syrup & 2tsp monk fruit), eggs & vanilla. whisk together with a fork until well combine.

  4. Pour the wet mixture into the dry mixture and combine well, then fold through the choc chips.

  5. Using a spoon, divide and roll small balls onto the baking tray. Be mindful the mixture gets very sticky.

  6. Bake for 15minutes, or until golden. Allow to cool for 10-20mins before eating.

    *store in an airtight container in the pantry.
