Coconut & Lemon bars

5 Ingredients in 5 minutes

You can’t go past a delicious snack that’s made in 5 minutes, with common household ingredients and something the whole family will likely enjoy.

Packed full of healthy fats, very low carbohydrates, and zero refined sugar. These coconut and lemon bars make a great snack in lunch boxes, as an afternoon pick me up, or after dinner when you fancy a sweet treat without the added sugar.

Ingredients

  • 1.5 cup desiccated coconut

  • 1 cup cashew or almond meal (you can make it yourself by blending 1 cup of nuts in a high powered food processor or Nutribullet)

  • 1/4 cup melted coconut oil or cacao butter

  • 1/4 cup pure maple syrup or honey

  • 1 large or 2 small lemons (for Juice & rind)

    *optional to add 2-4 drops of lemon essential oil

Method

  1. In a mixing bowl, combine desiccated coconut, cashew meal, and finely grated lemon rind.

  2. In another bowl whisk lemon melted coconut oil, maple syrup and lemon juice, and essential oil (if adding).

  3. Then add wet ingredients to dry ingredients until well combined. Taste and add more lemon juice or rind to suit flavour preference.

  4. Press mixture into a lined or silicone rectangle loaf tin and freeze or refrigerate for at least 1 hour before slicing.
