Ever bought a whole pumpkin cause it was cheap at the green grocer then had no idea how you were going to use the whole damn thing?
Well my friends, a little extra pumpkin mash is the perfect addition to your favourite sweet or savoury snacks.
Pumpkin is also naturally quite sweet, which means you can further hold back on adding unnecessary sugar.
Ingredients
2 cups GF flour
2 scoops vanilla protein powder
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ginger
1/8 tsp salt
1 tsp baking soda
1/4 cup chopped nuts (optional)
1/4 cup melted butter *swap out for dairy free option
1/4 cup extra virgin olive oil
1 cup pumpkin puree (boil 2 cups of pumpkin until very soft. >> Drain, mash, cool)
2 eggs
1/4 cup maple syrup
vanilla
Method
Pre-heat fan forced oven to 170
In a large mixing bowl add all dry ingredients and whisk until all combined.
In another mixing bowl lightly beat eggs then add all other wet ingredients.
Combine wet ingredients to the dry, and stir until smooth and there are no visible lumps.
Using a large spoon, divide muffin batter into a pure silicone muffin tray almost to the top of the rim. This should divine into about 10 muffins. Do 2 batches if you only have a 6 muffin tray.
Bake for 20-25min or until golden on top.
