Black bean brownie

Delicious, soft in the centre, and rich in flavour. These ooey gooey black bean brownies are an easy go-to snack that take no time at all to prep and bake. They would make for a great lunch box snack or an arvo pick me up.

They are easy to modify, and would work with alternative flours. Added nuts would also be a fabulous addition.

Ingredients

  • 1 can black beans *drained and rinsed

  • 1/2 cup rolled oats

  • 2 tbsp whole flaxseeds

  • 1 scoop protein powder *used Happy Way for sweetness

  • 1/4 cup pure maple syrup

  • 1/3 raw cacao powder *add more if you prefer them rich

  • 1/3 cup coconut oil or butter *melted

  • 1 banana 

  • 1 large egg

  • 1 tsp baking soda

  • 1 dash vanilla extract

  • pinch of salt


Method

  1. Pre-heat oven to 170º

  2. Using a bullet blender, whizz oats and flaxseeds into a flour.

  3. Place all ingredients into a food processor and blend until well combined, removing large lumps. There may be small lumps, which are okay.

  4. Using a spatula, transfer mixture into a rectangle silicone loaf pan and bake for 15mins. If the center feel uncooked, bake for another 2mins. However, it shouldn’t be cooked like a typical cake or brownie. It will become too dry if cooked all the way through from the oven.

  5. Leave to cool before slicing

  • 8g carbs

  • 6g fat
