'Healthier' Chocolate Slice
For those times when dessert is on the menu, but you don’t want to give into store bought sweets, that are laden with sugar and ultra-processed ingredients.
Ingredients
1 cup almond meal
1/4 cup pepita seeds
1/4 chia seeds
1/3 cup cacao
2 tbsp honey or maple syrup
2 tbsp smooth nut butter
Pinch salt
100g dark choc
Chopped nuts or desiccated coconut *optional
Method
In a food processor or NutriBullet, whizz up pepita & chia seeds into a rough flour.
Transfer into a large mixing bowl, then add almond meal, cacao and salt.
In a small heatproof bowl, heat honey just until it becomes runny then add nut butter and combine.
Add honey and nut butter mix to the dry mix and combine until it all comes together. It’s normal to be very crumbly
Transfer mix into a silicone or lined loaf tin, and press firmly to the bottom using the back of a spoon. Then freeze for 20-30mins.
Melt chocolate in a glass or stainless steel bowl over simmering water until smooth and shiny. *Be sure not to over heat it, or the chocolate will seperate.
Pour chocolate over slice, sprinkle chopped nuts on top, then refrigerate until completely set before serving.
